  • 1-cup gluten-free starchy flour, white rice, or tapioca flour
  • 1-cup gluten-free whole grain flour, brown rice, or amaranth flour
  • 4 tbsp coconut milk
  • 1 ½ tbsp lemon juice.
  • 2 tbsp butter or coconut oil
  • 2 eggs.
  • ½ cup coconut sugar.
  • 1 tsp sea salt
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 1 tbsp coconut sugar
  • 2 tbsp cornstarch
  • 2 to 3 cups of cherries or berries
  • Peeled slices of orange

Method to prepare
Fruit Cake Recipe

  1. Mix milk, flour, and lemon juice in a bowl.
  2. Cover the mixture and leave it for 7 hours.
  3. Take a baking bowl and grease it with butter or oil.
  4. Heat the microwave oven to 350 degrees.
  5. Now add cinnamon, tapioca flour, sugar, and fruits to a bowl and mix.
  6. Pour the above mixture into the baking pan, already greased.
  7. Bake it for 10 to 15 minutes.
  8. Now prepare toppings.
  9. Beat the egg in a bowl.
  10. Now add baking soda and ½ cup sugar to it.
  11. Now add this mixture to the soaked flour.
  12. Stir and beat it so that no lumps are left.
  13. Take the baking pan from the oven and spread this topping over it.
  14. Bake the entire thing again for 30 minutes.
  15. Remove the pan from the oven and allow it to cool.
