Red Lentil Curry Recipe: Tasty Diabetic Friendly Recipe

Red lentil curry is one of the best dishes for a diabetic patient, both in terms of health and taste.

This dish can be the main meal on your dining table rather than being a side dish.

The recipe is quite easy and is less time-consuming.

Ingredients for Red Lentil Curry Recipe

  • 2 ½ red lentils
  • 2 onions, finely diced
  • 1 tbsp Vegetable oil
  • 3 tbsp curry paste.
  • 1 tbsp Curry powder
  • ½ tsp turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Chili powder
  • Salt to taste
  • 1 ½ tsp Sugar white
  • 1 tsp garlic, minced
  • ½ Fresh ginger, minced
  • 2 Tomatoes, make purees.

Red lentil curry method of preparation

  1. Take lentils and wash them under cold water.
  2. Wash until the lentils are cleaned properly. This is very important.
  3. Do not take a pot and fill it with water.
  4. Put lentils in the pot so that it is fully covered by water.
  5. Boil it on a low-medium flame and do not forget to cover the pot.
  6. You can add water as needed.
  7. Continue this for up to 15 to 20 minutes until the lentils become tender.
  8. Now, drain the water.
  9. Take a pan and heat vegetable oil.
  10. Add onions to it and stir until they become light brown.
  11. Now mix the curry paste, turmeric, curry powder, chilli powder, cumin, sugar, salt, ginger, and garlic in the pan.
  12. Cook for 2 minutes.
  13. Now, remove the puree from the heat and add lentils. Your yummy dish is ready.
